This coming October 24th the Trapp Family Lodge will host a special Harvest Celebration Dinner. The feast features cider lacquered pork belly, poached farm fresh eggs, kale-pepper salad and braised grass fed beef; all products of the Trapp Family farm. Overseeing the kitchen for this tribute to local, Vermont table fare is Cody Vasek, the Trapp Family's new chef.

Chef Cody Vasek is a Texan who started cooking on the 140 year old Belleville farm homesteaded by his Czech ancestors. After apprenticing in the local bakery, hotel kitchens in Houston, Austin and chic New York restaurants, Chef Cody is applying his skills and experience to Trapp Family Lodge restaurants.

At the Trapp Family Lodge Chef Cody continues to innovate, turning out such inventive and exotic dishes as maple glazed quail, popcorn salad and pumpkin ravioli. Intimate knowledge of orchard, garden and pasture, passed down through many generations of Vaseks, inform his farm-to-table sensibilities. He works as much as possible with locally produced ingredients, through strong relationships with nearby growers, and the Trapp Family's own farm animals.
